I am in the process of building up a frame. A few wheelsets that I am looming at are Stans Grail built with performance house brand hubs Easton EA70 AX Easton EA 90 SL Anyone have any thoughts/opinions either good or and on any of the above wheelsets?.

Stand hubs are smooth and I’ve never had issues with them

Check the internal widths - depending on what tires you want to run. I think the Eastons are between 19 and 20mm if I remember correctly. The Stans are probably more like 21. I'm in the market for wheels myself and I'm trying to stay in the 21mm range to run 40mm tires but the 19-20 should work just fine and the Eastons generally get good reviews.
I've seen the Stans/Perf wheels - I'm not sure what hubs they use. Probably not Stans. You might call Performance Bike and see if you can find out if it's a quality hub or not. I'm not sure what your price range is but a couple more to consider: The new Stans Mk3 is around 700. Mavic All Road Elite UST can be found on sale less than 700.

The Eastons EA70AX are 23mm internal width. I bought a pair and put them on my gravel bike and they did what I was hoping for. Here's my write up:
